  • Chocolate Oats Pancakes

Pancakes are traditionally made up of all-purpose flour, which might not be a healthy choice for breakfast. Let’s replace all-purpose flour with chocolate oats, a healthier alternative.

Ingredients: 2 cups chocolate oats, ripe bananas, 2 eggs, 1 cup of milk, 2 tbsp honey or maple syrup, salt to taste and dark chocolate chips (optional).

  1. Mix grounded chocolate oats, eggs, mashed banana, honey, salt and chocolate chips. Let the mixture sit for a while.
  2. Pour the small portions of batter into a hot pan and cook until brown on each side.
  3. Once cooked, serve with fruits, nuts and a drizzle of honey.
  • Rolled Oat Dosa

Ingredients: 2 cups rolled oats, 1 cup rice flour, 1 cup yoghurt, cumin seeds, salt to taste and water as needed.

  1. Mix ground rolled oats, vegetables, semolina, rice flour, yoghurt, salt, pepper and coriander leaves and add water to make a thick batter.
  2. Spread the batter on a hot pan like you would for a regular utappam.
  3. Cook on both sides until golden brown and serve hot with coconut chutney.
  • Oats Vegetables Khichdi

Ingredients: 2 cups rolled oats, 1 cup moong dal, chopped vegetables, cumin seeds, turmeric powder, essential spices, ghee, salt to taste and water as needed.

  1. Dry roast the rolled oats for a few minutes and set aside.
  2. Rinse and cook moong dal with water until soft.
  3. Make a tadka of hot ghee, cumin seeds and curry leaves.
  4. Saute the vegetables in ghee for a few minutes. Add necessary spices, salt,  cooked moong dal along with the roasted oats.
  5. Stir the mixture and cook for 5-7 minutes by adding water for a soft khichdi-like consistency.
  6. Serve hot.

Ingredients: 2 eggs, 1 cup rolled oats, chopped onions, chilli, tomato and spinach, salt and pepper to taste and oil.

  1. Soak rolled oats in water for 10 minutes and grind.
  2. Beat 2 eggs and mix them with soaked oats.
  3. Add the chopped onions, chillies, spinach, salt and pepper.
  4. Pour the mixture into a hot pan and cook until both sides are golden.
  5. Serve hot.
