- 3 cups Cornflour
- 4 Eggs
- 3 teaspoon seasoning
- 3 cups breadcrumbs
- 2 cups flour
- 1 kg Boneless fish
Method
Mix the cornflour and breadcrumbs together well. Wash the fish properly then cut the fish into small pieces. Sprinkle the seasoning at fish. Coat completely the fish with flour, eggs and finally the corn flour and breadcrumbs mixture. Irrigate whole of material with fish for an hour to let the coating set properly. Method
Season the thighs of chicken with paprika, salt, and pepper. Soak in buttermilk and marinade in refrigerate for almost two hours. - 2 eggplants diced into ½ inch cubes
- 2 cup season breadcrumbs
- 4 eggs beaten
- 1 cup flour

For Vinaigrette
- ½ cup of red wine vinegar
- 3 tablespoon minced garlic
- 2 tablespoon Dijon mustard
- 3/2 cup olive oil
- 3 teaspoon chopped fresh oregano
- 1 teaspoon salt
- 1 teaspoon coarsely ground black pepper
- 1½ bag spring mix green
- 1 heart romaine chopped
- 10 basil leaves
- 10 fresh oregano leaves
- 10 parsley leaves
- ½ cup grated Parmesan
- 1 cup halved cherry tomatoes
- 1 red onion thin sliced
Method
In separate dishes add eggs, flour, and breadcrumbs. Properly coat the all cubes of eggplant in the egg then flour and finally with breadcrumbs. Carefully add the all cubes in the fryer and fry until they give crispy golden brown color around 4 minutes. Remove from the deep fryer and towel in a paper to drain the oil. Sprinkle salt and set aside.
Now Vinaigrette
Take a small bowl and combine the garlic, mustard, and vinegar well. Slowly whisk in the olive oil for the combine and emulsify. Add the pepper, herbs, and salt. Dress salad set aside.
