Ask for protein or carbs; nachos have it all. And the most important thing is it goes well with cheese! When it comes to the customizable dish, nachos suit for both solo and group dinner.

Have you thought of enhancing the taste of nachos? If you want to take the nachos to a new level, you can grill them with some chicken and cheese although the risk of being soggy nachos is always there. But if you directly blast the heat at the tortilla chips from the flame or coals underneath in the grill, it will make the chips crispy. And with all the heat cheese gets melt on top. To make the dish more cheesy, you can also add some liquid cheese, also known as nacho cheese sauce in Austalia.

You can dig in as is, or add your favorite topping like tomatoes, avocado, red onions and many more. Melted cheese on top and crispy chips below, its perfect grilled chicken nachos.

Ingredients

Tortilla chips                                                             8 ounces

Cheddar cheese                                                      2 cups

Cooked chicken meat                                             1 cup (chopped)

BBQ sauce                                                                1/2 cup

Sour cream                                                               1/2 cup

Tomato                                                                       ½ cup

Red onion                                                                 ¼ cup

Spring onion                                                             ¼ cup

Avocado                                                                    ½ cup

Olive                                                                           ¼ cup

Direction

Step 1:  Preheat the grill at high heat. Meanwhile, the grill is heating, prepare all the necessary ingredients.

Step 2: Make the small pieces of chicken and cook them. After the chicken is cooked, take a large bowl and mix the chicken and ¼ of BBQ sauce. Let them rest for a while.

Step 3: Mix the sour cream with ¼ cup of BBQ sauce and keep aside.

Step 4: With some sheets of aluminum foil make a boat shape by crimping the sides.

Step 5: Now, place a layer of tortilla chips on your aluminum boat. Make sure all chips have some exposure at the top. Sprinkle American cheddar cheese over the chips (Don’t use all the cheese keeping some for topping the chicken).

Step 6: Sprinkle the chicken over the chips and sprinkle with remaining cheese.

Step 7: Place you nacho boats on preheated grill and cook for 5 to 10 minutes by covering the grill, until the cheese melts and the chips are lightly brown at the edges.

Step 8: Add cheese sauce to your taste and drizzle with sour cream BBQ sauce. Garnish the nachos your favorite toppings such as chopped tomato, red / spring onion, olive, or avocado.

Quick tips

  • If your grill doesn’t have a cover, you can make a large foil packet to put the nachos or cover the nachos with another piece of foil.
  • In case you are using a gas grill, the preheated grill can be hotter. Turn down the flame a bit before cooking else you may torch your chips.
